Fast and Easy Meals: Chicken Teriyaki Stir Fry
Here is a quick one that you can make very fast, and doesn’t cost a fortune. This stir fry takes only a few ingredients, and requires minimal preparation, so let’s dive right into it.
-What You Need-
1.5 Lbs. Chicken Breast(about 2 breasts), Cut into bite sized cubes
5 Bell Peppers(1 red, 1 yellow, 1 orange, and 2 green), sliced evenly
1 Medium Sweet Onion, sliced evenly
1 Medium Zucchini, cut into even pieces
1 Shallot, sliced thin
1-2 Tbsp. Fresh Ginger, minced
1/4 Cup Teriyaki Sauce(you can make your own or buy some at the store. I’m not going to get on your case if you choose to use store bought but I suggest Honey Mirin or Stir Fry Teriyaki sauce)
Kosher Salt
High Smoke Point Oil(I prefer avocado oil, but vegetable oil works as well)
Optional: MSG
-Lets Get Cooking-
1) Place your cubed chicken breast into a bowl or zip-top bag and add a pinch of salt, and half of your teriyaki sauce to fully coat the chicken. Put your marinating chicken in the chill chest at least an hour before you plan on cooking it.
2) Place a large pan, or wok, on medium-high heat with enough oil in the pan to coat the inside. You need to get the oil hot enough where you can flick a droplet of water off your finger and it will dance on the oil instead of sizzle, but don’t let your oil smoke. You may see wisps of vapor come off the oil when it gets hot enough, but it won’t smoke just yet.
3) When your pan is hot enough, add the ginger and shallot to the pan, and start moving it around fast. the goal here is to give the ginger and shallot a little color, but if you take your eyes off of it, you will burn it.
4) Once the ginger and shallot gain a slight golden brown color, bring the heat to high, put all of your peppers and onions in the pan, season with a pinch of salt, and start mixing and moving your stir fry around. We are going to cook everything in the pan until the peppers soften a little bit and the onions gain some golden brown edges. Once the veggies are cooked to this point, evacuate to a mixing bowl.
5) In the same pan that you just cooked all of your veggies in, add a little more oil, and bring the pan back up to temperature. Once at temperature(as we did before) add your marinated chicken to the pan, and spread it our so that every piece of chicken is in contact with the pan.
6) Let the chicken sit there until you see the edges start to go golden brown along the edges. when they start to get golden brown, start moving the chicken around, and try to get a good sear all around. The teriyaki sauce you used to marinate should start to thicken on the bottom of the pan. keep cooking until you can slice the thickest piece of chicken in the pan, and it’s cooked through.
7) When your chicken is cooked to this point, add everything else back to the pan. Mix everything well. Add the rest of your teriyaki sauce(this is the time to also add about a teaspoon of msg as well if you choose to use it), and mix well.
8) The stir fry is now complete. the veggies should be softened, yet still have a slight fresh crunch. The entire stir fry should have a thin coating of teriyaki sauce, but not too much. Move your stir fry to a serving dish, then serve this over rice, or how I prefer it is over rice noodles(which you can find in the Asian section of your local grocery store. I use linguine cut brown rice noodles).
9) When you move the stir fry to a serving dish, you should be left with a little liquid at the bottom of the pan. Add a little teriyaki sauce, and a splash of water, and mix well. bring this to a simmer, and let it reduce until the sauce becomes thick, and use this sauce in your rice or mixed into your rice noodles. If you aren’t using rice or noodles, add this thick sauce to your stir fry for even more flavor.
