Steaming is Old News, Easy Oven Roasted Broccoli
Have you ever wanted an easy way to prepare broccoli that isn’t your typical “throw it in a saucepan with a little water and steam until mushy?” Well here you go! This is a super simple way of making that little green bush of delicious in a way that will have you asking yourself why you ever steamed it in the first place.
-What You Need-
1 or 2 Crowns of Broccoli(or more if you have a big party)
1-2 Tablespoons of Olive Oil(we are cooking with the oil, so regular olive oil, not extra virgin. Extra virgin olive oil has a low smoke point so it is not ideal for cooking, but is fantastic for finishing or making dressings)
Kosher Salt and Freshly Ground Black Pepper
Freshly Grated Hard Cheese(Pecorino Romano or Parmesan Reggiano work very well)
2-4 Cloves of Garlic
-Let’s Make It-
1) Lets start with making a garlic paste. on your cutting board, peel your garlic cloves, and add a pinch of salt over them. Start by finely slicing your garlic, and when you have it sliced, just take your knife and start rocking it over your garlic, by pinching near the bolster of your knife, and resting two fingers of your non dominant hand over the spine of the knife where you are going to rock it. Keep rocking your knife over the garlic until it starts becoming a paste. this should only take a few minutes.
2) Preheat your oven or toaster oven to 325 dungarees Frankenstein(Fahrenheit), or 162 Science(Celsius)
3) In a large mixing bowl, with your broccoli cut into manageable pieces(Try to make sure all of your broccoli is cut evenly so that it cooks evenly), drizzle your olive oil over your broccoli, and toss to coat all of your little green guys.
4) Lay out your broccoli on a wire rack in a baking sheet(or an air fry basket if your toaster oven has one). Season all of your broccoli with your kosher salt and freshly ground pepper, evenly spread your garlic paste over the tops as well as adding your freshly grated cheese on top.
5) Place everything in the oven/toaster oven, and cook for 20-30 minutes, or until the broccoli boys are bright green, with browned edges, and a fork slides into them with minimal effort. When you remove them from your hot box, add a little more grated cheese, and serve relatively quick so that they don’t go cold. Enjoy.
*You can also add a basic breading to your broccoli while seasoning it for a little more texture and depth, but it is not necessary.
